I suspect the main thing that keeps people strength training is an insatiable desire to be stronger. If you want to get stronger really badly, you'll lift.

My experience was that past the early intermediate stage, getting stronger ceased to have a noticeable positive effect on day to day life. Initially everything got easier - climbing stairs, running, moving furniture, etc. But now the process of getting stronger doesn't noticeably do that. If anything, it means being willing to occasionally have day to day tasks become harder because I'm worn out or sore.

So I suspect after the relatively easy gains have been made, people who just wanted to improve their life will quit or lift more sporadically, and it's fine because they really don't need to be stronger than they are. On the other hand, some of us have been bitten and are not only willing, but quite compelled to spend months doing set after set in order to add 10lbs to our squats.
