I don't know what's going on but my mother in law is gonna be weirded out when I show up with some chalk...

If you grab a chicken (or other bird), put a cloth or sock or hood over its head ..... and wave it around in a looping motion, you'll induce a sort of vertigo and put in into this pseudo-hypnotic state. I imagine that was done off camera right before the filming or the chickens were off screen.

People who train hunting dogs to sniff out game birds will do this with pigeons for training purposes.
