low carb deserts

A few of the things I've done to make low-carb dieting more tolerable:

1) Mix chocolate protein powder with peanut butter.
Real peanut butter, like Smuckers or Adams. Instead of following an exact ratio, I just fill a bowl with however much peanut butter I feel like eating, then mix in as much protein powder as it can hold. I find more than half a jar makes me sick.

2) Heating up a Quest bar.
At room temperature, quest bars are disgusting. But 10-15 seconds in the microwave really improves them; it's almost like a fresh cookie.

3) Homemade ice cream
Put one cup of cream, 1-2 tbsp of Swerve, and a drop of vanilla extract into a mason jar. Then shake it violently for 10 minutes and then put it in the freezer for 4-5 hours. It has a distinctly creamy taste unlike store-bought ice cream, but it is still good. Don't leave it in the freezer too long or it'll harden.

Our grocery store brand is suitable.
Otherwise it's Teddy's, which is good, but too expensive.

High % cacao chocolate is doable on LCHF
If you like that sort of thing.
Even 72% is ok.
I feel like that can still be sweet enough for people.
A few squares doesn't add much carb.

I haven't done this yet, but our store has organic coconut milk for $2 a can, and when you open it about half the can is basically coconut creme, which is much more expensive on its own.

It's a perfect pudding texture and consistency, and i imagine adding some good cacao powder and erythritol or stevia could make a really awesome dessert.

I really have no sweets anymore, and even the heavy cream i put in my coffee tastes really sweet to me now.
Not once it's in the coffee of course.

I will sometimes have a couple dried prunes (9 grams carbs) and a little peanut butter, like just a teaspoon, and chew up that up together.
Nice treat for me anyway.

Our store only carries the chocolate peanut butter, but it's good.
Wife likes it, and i'll have little bites when we get it.

She's not keto, but i did get her off sugar, and on a low(er) carb diet.

I haven't done this in a while, so it might actually be not as good as I recall... but cottage cheese with a spoonful or two of peanut butter put through a blender was fuckin bananas... side note... it was really good with chopped up bananas...

I literally just stir in pistachios and eat a 1lbs tub as a meal.
