Do you guys used leftover chicken carcass to make stock? Been doing it for a while and it really adds to the soup the next day.
I usually buy a couple of chickens and cut off the legs, wings and remove the breast. I end if smoking the meat for dinner on Saturday and while that's smoking, I brown the carcass in a Dutch oven on the stove with carrot, onion, salt, pepper corns and bay leaf. Add water to just cover the carcass and simmer for 2 hours.
Than after dinner I'll make chicken soup for Sunday dinner.

I made some Indian-ish chicken last night. Based off Mrs Manveer's recipe. Was pretty damn good.
