Yes I've made carnitas and some similar beef-based dishes and they are awesome. Anything with sufficient lime juice is pretty tasty!

We now have an instapot. Also this thread reminded me that we have that dutch oven pot thing, and I really want to make another pork shoulder. Last time I smoked it for a while, then threw it in the pot for some hours with a green chili salsa, and it was awesome (but too spicy).
Made half-ass-shredded-chicken in the instapot yesterday, and it was surprisingly edible.
