Re: Sauces and Seasoning.
Oh man - this is up my alley. My wife complains I overflavor things, so take that into consideration.
1) Buffalo sauce for chicken. Easiest thing in the world. Mix Franks Red Hot sauce with melted butter and ranch (2-1-1 ratio should work)
2) Paprika Coconut milk sauce. Brown chicken breasts/thighs, fry some cherry/grape tomatoes till they get soft, then simmer in a sauce made from a can of coconut milk, 2 TB of Paprika, garlic, little cayenne, cumin, salt and pepper.
3) Harissa/Ras El Hanout spice mix. Harissa is a paste made of of chilis and Ras el Hanout is a Maghrebi spice mix that I have sort of merged together. I like the heat of the Harissa, but also like the complexity of the Ras El Hanout. Cumin, Ginger, salt, pepper, cinnamon, coriander, cayenne, allspice, caraway seeds, then I grind up some chipotle and guajillo chiles I use it in everything from Shakshuka, to roasted veggies, to tagines.

No recipe. I used to do just the hot sauce and butter thing to until I decided to try the ranch. Yummy either way, but I like the creaminess with the ranch. I don't measure or anything just kind of pour ingredients till the consistency feels right. That ratio seems about right though.

Penzeys Chicago seasoning. It's a mixture of smoked salt and pepper. Delicious!

I've had the Chimmichurri recipe you linked months ago as an open tab in my phone browser ever since for fear of losing it. Stuff was all-balls on pulled pork as you recommended.Hanley wrote: ↑Thu May 02, 2019 1:45 pmChimmuchurri.LexAnderson wrote: ↑Thu May 02, 2019 1:27 pm Ok so what are everyone's go to sauces and seasonings? Gonna fire up some carne asada this weekend (Costco flap meat) and that will be one of the toppings.

Re: Sauces and Seasoning.
I did Blue Apron for a while and got some good ideas from there....
Zatar is a good and versatile spice blend
Black bean sauce and mayo mixed together on burgers (spread it on the bun - it's creamy and tangy)
I add garlic and ginger to a lot of stuff now - stir-fried veggies, burgers, etc.
I also like chili paste. When I make a steak on the stove-top I usually sit a little dish of butter, chili paste, chopped walnuts, and honey next to the burner so the butter softens, then I mix it all up and put it on top of the steak.

Re: Sauces and Seasoning.
Can we talk about sauces we hate? Sweet tomato based bbq sauces are a sin against nature.
I don't know how that smokey, sweet, tomato-y abomination became a thing.
Let the world burn.

You had me at smokey and sweet, sounds delicious. That's why I put brown sugar and black pepper on my bacon before I cook it.
