pickled herring

I like to eat pickled herring on top of buttered soft rye bread. Maybe with a beer to drink. I usually prefer it in wine sauce, but I tried Skansen's matjes herring in spiced sauce today and it was nice and interesting.

How do you like to eat pickled herring? What variety is your favorite? What other snacks would you recommend for a pickled herring fan?

Sour cream and pickled onion.
I used to get it fresh made, salad bar style, back in Oregon years ago.

I always just ate it on its own.

I prefer old fashion pickled herring (matured for months in salt) also on buttered (danish) ryebread. The way I construct the sandwiches is: something creamy (sour cream, neutral fresh cheese, (smoked) fresh cheese-sour cream emulsion, whipped cream, spiced mayo, etc), something with bite (usually onions), something raw (cucumber, radishes, apples, plums whatever might be in season) and something crispy (fried onion bits, bacon crumbs, toasted ryebread crumbs, fried buckwheat grains, pork cracklins etc). Top with some fresh herbage and you got yourself a lovely meal. Goes much too well with akvavit...

Ugh. I had a roommate who would often set a tin of pickled herring on the electric stove burners to heat it up. He was banned from eating it after the time he forgot about it on the stove.
