Hi guys.
My old log was about to be a very lonely place.
Now that we're all here. I smoked some pork over the weekend and I think it was the best one I've done so far. I cut a 10lb boneless shoulder in half so I wouldn't have to get up at 3am to get it finished for dinner. Salt the night before and Memphis dust right before the smoke.
I used a mixture of oak and cherry wood chunks for the smoke. I think I had about 9 1/2 hours total cook time with the last 2 or 3 wrapped in foil. The pulled pork disappeared in a hurry. We had 12 people total and less than 1/2 pound leftover.
